Turkey Zucchini Meatballs with Spaghetti Squash

Ingredients:

Meatballs:

  • 1 lb lean ground turkey
  • 1 medium zucchini, grated and squeezed dry
  • 1 egg
  • 1/4 cup grated parmesan
  • 1/4 cup gluten-free breadcrumbs or almond flour
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Serving:

  • 1 medium spaghetti squash, roasted and forked
  • 2 cups marinara sauce (no sugar added)
  • Optional: extra parmesan, chopped basil

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment.
  2. Combine all meatball ingredients in a bowl. Roll into 16 balls and place on the sheet.
  3. Bake for 20–25 minutes or until browned and cooked through.
  4. Heat marinara and spaghetti squash, top with meatballs, and garnish.
