Ingredients:
Meatballs:
- 1 lb lean ground turkey
- 1 medium zucchini, grated and squeezed dry
- 1 egg
- 1/4 cup grated parmesan
- 1/4 cup gluten-free breadcrumbs or almond flour
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
For Serving:
- 1 medium spaghetti squash, roasted and forked
- 2 cups marinara sauce (no sugar added)
- Optional: extra parmesan, chopped basil
Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment.
- Combine all meatball ingredients in a bowl. Roll into 16 balls and place on the sheet.
- Bake for 20–25 minutes or until browned and cooked through.
- Heat marinara and spaghetti squash, top with meatballs, and garnish.
