Protein Pancake Stack with Berry Compote

Description:
A fluffy, satisfying breakfast that feels indulgent but packs over 30g of protein per serving. No refined sugar. Just whole ingredients + gym-supporting macros.

Ingredients:

  • 1 banana, mashed
  • 2 eggs
  • 1/2 cup egg whites
  • 1/3 cup oat flour (or blended oats)
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt

Berry Compote:

  • 1/2 cup frozen blueberries
  • 1/2 cup frozen raspberries
  • 1 tsp maple syrup
  • 1/2 tsp lemon juice

Instructions:

  1. Blend or whisk pancake ingredients until smooth.
  2. Cook on a nonstick skillet over medium heat until bubbles form, then flip.
  3. For compote, heat berries in a small saucepan until soft, mash slightly, and stir in maple syrup + lemon.
  4. Stack pancakes, pour over berry compote, and optionally top with Greek yogurt or nut butter.
