🍪 Oatmeal Chocolate Chip Cookies

Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1½ tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 3 cups rolled oats (old-fashioned, not instant)
- 1½ cups semisweet chocolate chips
- (Optional) ½ cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
- Add the eggs and vanilla extract, beating until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients.
- Stir in the oats and chocolate chips (plus nuts if using).
- Scoop ~2 tablespoons of dough per cookie onto the baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes or until edges are golden brown (centers will look a little soft).
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.

- Want them chewier? Use more brown sugar than white (e.g., 1¼ cup brown, ¼ cup white).
- Want them softer? Chill the dough for 30 minutes before baking.
- Add a sprinkle of flaky sea salt on top before baking for a fancy twist.
