🍪 Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 cups rolled oats (old-fashioned, not instant)
  • 1½ cups semisweet chocolate chips
  • (Optional) ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add the eggs and vanilla extract, beating until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Stir in the oats and chocolate chips (plus nuts if using).
  7. Scoop ~2 tablespoons of dough per cookie onto the baking sheet, spacing about 2 inches apart.
  8. Bake for 10–12 minutes or until edges are golden brown (centers will look a little soft).
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

  • Want them chewier? Use more brown sugar than white (e.g., 1¼ cup brown, ¼ cup white).
  • Want them softer? Chill the dough for 30 minutes before baking.
  • Add a sprinkle of flaky sea salt on top before baking for a fancy twist.
